Picnic in the Country

 

The other day it was an absolutely gorgeous  day so I loaded the kids up in the van and we took a drive out into the country.

 

As we drove that day, we had fun spying on the cows sunning themselves in the pastures…  Being from the city, when the kids see a cow… it’s a big ordeal!

 

I had packed a little picnic lunch that we could sit and enjoy somewhere on our little journey… We eventually settled into a little area just off the road and spread out our little picnic lunch and had our simple meal of chocolate chip cookies, fruit and some lemonade.

 

We picked a few wildflowers that day, laid on our blanket and watched the clouds and the shapes they made in the sky…Then reluctantly we gathered up our things and made our way back home.  Tummies full and a warm breeze coming through the car windows, the kids slept for the trip home.  As I drove home I reflected on my day…does it get any better than this?…

Here is a recipe for an oldie but goodie…chocolate chip cookies.  If you love a chewier denser chocolate chip cookie, please do not substitue all-purpose flour for  the bread flour. The bread flour  is a reason  these cookies are so chewy!

Chewy Chocolate Chip Cookies

In a large mixing bowl, cream together:

      1/2 c butter, at room temperature

      1  3/4  c  brown sugar, slightly packed

      1 T  molasses

      1 T  vanilla extract

      1 T  butter flavoring

      1 T  milk

Then add:

      2 eggs

Beat until creamy… then sift together:

      2  1/2 c  bread flour

      1 t  baking powder

      1 t  baking soda

      1 t  salt

Add to creamed mixture and beat until combined. Add:

      1 c semi-sweet chocolate chips

Stir until combined and then drop by teaspoons onto a greased cookie sheet. Bake for 10-11 minutes or until they have puffed and tiny cracks appear on the top. Makes about 40 cookies.
